Chia Pudding Blog Recipe

Once the chia pudding has been spotted by our daughter it doesn’t last long. She exclaims “I’m a chia pudding girl” and proceeds to back up her claim. Great texture and delicious flavour make this a great start to every day.

Process:

Vanilla chia seed pudding
Place all ingredients in a glass jar. Stir very well with a spoon. Screw on lid and shake the jar vigorously so the chia seeds don’t clump. Place in the fridge overnight so the chia seeds soak up all the milk and get that delicious pudding consistency.

Blueberry cream
Blend all ingredients together in your OmniBlend until it’s smooth and creamy. Layer each pudding in a glass alternating between cream and pudding. Top with cacao nibs and serve. Enjoy!

Ingredients:

Vanilla chia seed pudding
4 tbsp chia seeds
1 cup almond milk (or coconut milk)
1 1/2 tbsp maple syrup
1 tsp vanilla essence

Blueberry cream
1 1/2 cups frozen blueberries
1/2 cup soaked cashews (soak for at least 4 hours)
1 tbsp lemon juice
2 tbsp maple syrup
Pinch of salt

Garnish
Cacao nibs (optional)
